Wild Northumbrian Maize Saison
From the brewer
The first of our four '4th Anniversary' beers to be released.
Brewed with British grown maize and aged English hops. Open fermented with both our house mixed culture of native Northumbrian wild yeast cultured from hedgerows on our farm, and spontaneously captured on-farm microflora from our coolship collab with Almasty, before secondary fermentation with Brettanomyces.
High carbonation, slightly tart and a dry finish with notes of Bretty funk, lemon sherbet, dry white wine and crunchy nut cornflakes.
Only 800 bottles produced.
